Pancake Muffins

I made these a for a quick on the run breakfast for the kids.

Grease cupcake pan

Pour in pancake batter

Top with cooked ground sausage

Cook in oven for roughly 20 min at 325*

My name is Tara Almanza and I LIKE to cook, but I wouldnt say Im great at it but I do enjoy it. As you look at my recipes you'll see Im into the flavor and not really the look =). Plus Im a full time working mom of 3 little ones, so I like fast, simple meals I can make at the end of a long day. On numerous occasions I have made something that my husband loves, and then later he'll ask me to make it again and I cant find the recipe. Or sometimes we just plain forget, and I know theres some good ones. So heres my online cookbook... Im taking pictures to help me remember that recipe.
