Portuguese Sausage Breakfast
This is kinda a speak for itself recipe.
I just dont want to forget about it.
Slice and cook portuguese Sausage in a skillet. Serve with Eggs & Rice. Top with soy sauce.

Whole wheat waffles w/ berry syrup

Whole-Wheat Waffles
SERVES: 4 - 5
INGREDIENTS
- 2 large eggs
- 1 ¾ cups milk (I have used everything from skim milk to thick buttermilk…so whatever you have on hand should work)
- ¼ cup oil (I used melted butter)
- 1 tablespoon honey
- ½ teaspoon ground cinnamon
- ¼ teaspoon baking soda
- 1 ½ cups whole-wheat flour (I used King Arthur’s organic white whole-wheat flour)
- 2 teaspoons baking powder
- ⅛ teaspoon salt
INSTRUCTIONS
- Preheat your waffle iron.
- In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
- Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
- When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 - 4 minutes each).
- Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. Enjoy!
Berry Syrup:
Ingredients
- 1 cup blueberries, washed
- 1 Cup Strawberries, washed
- ½ cup sugar (I used sucanat)
- 1 cup + 2 Tablespoons water, divided
- 1 Tablespoon cornstarch
Instructions
- Combine 2 Tablespoons water and cornstarch in a small dish and set aside.
- In a medium saucepan, bring water, sucanat (or sugar) and berrys to a boil. Stir occasionally. Reduce heat and simmer for about 10 minutes. Add water+cornstarch mixture and blend well. The sauce will thicken, the berrys will have busted open and it begins to smell like pie.
- Store in refrigerator up to 30days. Take out a few minutes before serving at room temperature or warm.

Chocolate Zuchini Muffins
Made 24 muffins :
Ingredients:
3 eggs
1 cup vegetable oil
- 2 cups sugar
- 1 tablespoon vanilla extract
- 2 cups zucchini, peeled, shredded (about 1 medium)
- 2 1/2 cups all-purpose flour
- 1/2 cup baking cocoa
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon, ground
- 1/4 teaspoon baking powder
Directions:

In a mixing bowl, beat eggs, oil, sugar and vanilla.

Stir in zucchini.

Combine dry ingredients; add to zucchini mixture and mix well.

Pour into two greased 8x4x3-inch loaf pans.

Bake at 350°F for 1 hour or until bread tests done. Makes 2 loaves.Muffins are the perfect freezer breakfast. With this making 24 muffins. I froze a bunch and just pulled out like 5 the night before for a super fast, yummy breakfast.

Buttermilk Pancakes
Original Recipe Yield12 - 5 inch pancakes
Ingredients
- 3 cups all-purpose flour
- 3 tablespoons white sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3 cups buttermilk
- 1/2 cup milk
- 3 eggs
- 1/3 cup butter, melted
Directions
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
- Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
- Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.
Monkey Bread
Ingredients:
Bread or Boll Dough (either homemade or pre-package store bought)
Egg
Sugar
Cinnamon
Directions:
Cut Dough into 1.5 inch sections. Beat egg into one bowl and cinnaon and sugar into a seperate bowl. Dip dough into egg and then drop in and coat into cinnamon and sugar mixture. Drop into pre-greased pan and bake at 350* roughly 15-20 min (or amount as stated on dough package).

Easy Doughnuts
Soo Easy!
Ingredients:
1 package Pilsbury Large Homestlye Biscuits
oil to fry
Powder sugar
frosting
Directions:
Preheat Oil over medium heat for about 5 min to make sure warm enough. Poke a hole through center of biscuit. Round out nicely. Drop doughnut in oil (my oil cover half of doughnut). Flip once one side is light brown. Cook other side. Place on papertowel to obsorb some oil. Let cool completely. Top with powdered sugar or frost as desired.
Frosting :
Powdered sugar.
1 tsp. vanilla
2 tbsp. milk
Pour powder sugar until desired consistensy is reached.
DELICIOUS!! and soo simple!

Hoot-a-nanny Or German Pancakes
I grew up calling this Hoot-a-nanny but come to find out the "normal" name is German Pancake. Anyways. These are a SIMPLE egg version of pancakes. Perfect for Sunday morning. Mix together throw in the oven , take and showerm and done!
Your kids will love them too!
Ingredients:
6 eggs
1 cup milk
1 cup flour
1 tsp. vanilla
1/2 tsp. salt
2 Tbls. Butter, Melted
* Set oven to 400* Melt butter and pour into cookie sheet (with lip. Mix all other ingredients together in Large Mixing bowl. Pour mixture over butter, into pan. Bake for 20 min. Serve with Syrup (how we like) or powdered sugar or ketchup.

Chocolate Crepes
Servings: 12 (1 crepe each serving)
Ingredients:
1 cup Flour
2 Tbsp. Cocoa Powder
1 Tbsp. Powder Sugar
1 1/2 Cups Milk
2 Lrg Egg Whites
1 Whole Egg
1 tsp. Oil
Mix in Large bowl.
Heat and Spray small fry pan ( about 8 ")
As you would cook a pancake, pour in about 1/3 cup into sprayed pan. This should only be a thin layer. Let start to bubble and flip. Cook through both sides.
Fill inside with desired fruit and whipped cream. Topp with powdered sugar and chocolate syrup.

Chorizo and Egg Breakfast
Jaiden has been requesting this for Breakfast.
Ingredients:
1 PKG Pork Chorizo
6 Eggs
roughly 2 cups chopped/cooked potatoes (we used a bag already for breakfast)
About 10 tortillas, warms on the stove (We preffer pre-cooked, there soo yummy)
1. Cook chorizo over stove top high heat until cooked through, about 5-7min (Like you would ground beef)
2. Add Egg and scrabble untill cooked though.
3. We normally serve with just egg and chorizo but add potato for a little change and to go further.
4. Heat tortillas and serve.
5. Eat by tearing tortilla in pieces and pinching up meat as shown below.
Super yummy!

I dont know what to call this but my sister told me about it.
Soo perfect for running out the door. Not even too bad for eating in the car, even a baby ;)
Warm you frying pan. Spray with non-stick spray. Crack one egg into pan and then break the yolk with a fork. Drop a tortilla on to and circle around in pan with a fork or your hand. SO that the whole side of tortilla is covered in egg. Then stop and wait for a few seconds while the egg finishes cooking. THen flip over and let the other side of tortilla crisp up.
Thats it. You can roll up and eat plain (For on the go) or dip into sauces such and ketchup, salsa, or even syrup. My kids all enjoyed it.

Apple-Cranberry Breakfast Cookie
Weight Watchers 2 points each
1/4 cup no salt soft margarine
3/4 cup dark brown sugar
2 lrg. eggs
1/2 cup unsweetened applesauce
1 1/2 cup whole grain wheat flour
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 tsp. baking soda
1 1/2 cup uncooked quick oats
1/2 cup dreid apples, chopped
1/2 cup dried cranberiies
1/2 cup chopped walnuts (optional)
Preheat oven to 350* F
Combine margarine and sugar in the bowl of an electric mixer; beat until light a fluffy, about 1 minute. Add egss and beat for 30 seconds; add applesauce and beat just to mix.
In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Add oats, apples, cranberries and walnuts; combine by hand.
Line cookie sheet with parcement paper or coat with cooking spray. Drop batter by heaping Tblsp 1 inch apart. Bake until cookies are lightly browned and firm, about 13-15 min.
Remove from oven and let stand 10 min. Move to wire rack and cool completely. Yeilds 1 cookie per servign. (Note: store leftovers in airtight plastic bag or container in the freezer.)
