Cheesy Chicken Over Rice



Ingredients:

2 tsp. Oil

4 Small Boneless, Skinless Chicken Breast

2 c. Frozen Veggies

1 can Cream of Chicken Soup

4 Oz. Velvetta Cheese

2 C. Cooked Rice

Salt and Pepper to Taste


Directions:

Heat oil in pan on stovetop. Add cubed chicken, Cook until browned and juice is clear. Add frozen veggies. Heat through. Add Velveeta Cheese and cream chicken soup. Let cheese melt and heat. Serve over cooked rice. Top with salt and pepper.

Roasted Cauliflower



Easy, Healthy, Delicious Snack... Yes, Delicous, weird as it sounds






My mom gave this to me today and I requested more.


Ingredients:

Head of Lettuce

1-2 Tbsp Olive Oile

Garlic Salt


Parmesan Cheese.. Optional



Directions:

1. Cut Cauliflower off stems.

2. Put in ziploc bag with Oil

3. Shake to coat

4. Put on baking pan

5. Top with Galric Salt and Parmesan Cheese if Desired

6. Bake at 350* until browned slightly

7. Can be eaten with FINGERS :)

Cowboy Casserole


Yeilds: 5 Servings Time: 25 min.


Ingredients
1/2 pound bacon
1 pound ground beef
1 small onion, chopped
2 (15 ounce) cans baked beans with pork
1/3 cup barbeque sauce
1 (7.5 ounce) package refrigerated biscuit dough

Directions:

Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite size pieces. Set aside. Add hamburger and onion to the skillet, and cook until no longer pink, and the onion is tender. Drain.
Stir bacon, baked beans and barbeque sauce into the ground beef, and bring to a boil. Reduce heat to medium low, and place biscuits in a single layer over the top of the mixture. Cover, and simmer for about 10 minutes, or until the biscuits are done. Place two biscuits on each plate, and spoon beans over.

Ranch Burgers


Ingredients
2 pounds lean ground beef
1 (1 ounce) package ranch dressing mix
1 egg, lightly beaten
3/4 cup crushed saltine crackers
1 onion, chopped

Directions
1.Preheat the grill for high heat.
2.In a bowl, mix the ground beef, ranch dressing mix, egg, crushed crackers, and onion. Form into hamburger patties.
3.Lightly oil the grill grate. Place patties on the grill, and cook 5 minutes per side, or until well done.
4. Serve on toasted bun topped with your favorite toppings, include extra ranch dressing on top (really yummy)
