  • 1/2 cup lowfat buttermilk
  • 1/4 cup light mayonnaise
  • 1/4 cup fat free Greek yogurt
  • 1 small jalapeno, seeds removed, leave them in if you want it spicy
  • 1/4 cup of fresh cilantro
  • 1 tomatillo, husks removed, chopped
  • 1 clove garlic
  • 1 scallion
  • juice of 1/2 lime
  • 1/2 tsp dried parsley flakes
  • 1/8 tsp cumin
  • 1/4 tsp fresh ground pepper
  • 1/4 tsp salt
Makes 1 3/4 Cup

Pete liked this more than I did. It was really yummy to dip in the sw turkey meatballs but alone I wasnt a huge fan. He ate with chips though

Combine all ingredients in a blender.

Ingredients:
  • 1-1/4 lbs 99% lean ground turkey
  • 1 jalapeño, seeds removed (leave some in for spicier meatballs)
  • 2 cloves garlic
  • 1/4 cup chopped fresh cilantro
  • 3 scallions
  • 1/4 cup seasoned bread crumbs
  • 1 egg
  • 1 tsp cumin
  • pinch oregano
  • salt and fresh pepper
  • cooking spray

Directions:

Lightly spray
baking pan with oil.
Preheat
oven to 400°.
Place jalapeño, garlic, cilantro, and scallions into a small food processor or chopper and pulse a few times until finely minced.
In a large bowl combine turkey, chopped herbs, bread crumbs, egg, cumin, salt and pepper. Using your hands, mix well and measure 1/4 cup meat, then divide in two so you end up with each meatball 1/8 cup in size. Roll and place on a baking pan.



Bake meatballs at 400° 15 minutes.

Makes 24 meatball.

Buttermilk Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons white sugar
  • 3 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3 cups buttermilk
  • 1/2 cup milk
  • 3 eggs
  • 1/3 cup butter, melted

Directions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Baby Red Potato Salad

Ingredients:

4 cups baby red potatoes, cut in small pieces
1/4 cup red onion, finely diced
3 scallions, diced
1 tsp. mustard
1 Tbsp. extra virgin olive oil
1 Tbsp. red wine vinegar
1 Tvsp reduced fat mayonnaise
salt & pepper


Boil potatotes in salted water until soft, approx 10 minutes. Drain and let cool


While the potatoes are boiling, combine all other ingredients. Coat onto potaoes. Serve room temperature or cool till ready to serve.

Monkey Bread



Ingredients:

Bread or Boll Dough (either homemade or pre-package store bought)
Egg
Sugar
Cinnamon


Directions:
Cut Dough into 1.5  inch sections. Beat egg into one bowl and cinnaon and sugar into a seperate bowl. Dip dough into egg and then drop in and coat into cinnamon and sugar mixture. Drop into pre-greased pan and bake at 350* roughly 15-20 min (or amount as stated on dough package).

Cilantro Lime Chicken Tacos

DELICIOUS!! This is a horrible picture but yummy. Very summer tasting. Light and Refreshing! Rylan asked for me to pack in his lunch the next day he liked it so much.

Pesto Ingredients:

1 cup fresh cilantro (do not include stems)
2.5 TBLSP. Extra virgin olive oil
2 Tbslp sliced almonds
3 Tbslp garlic
1.5 tsp lime juice
1/2 cup shredded paremsan (could swap for romano or asiago too)
1.5 tsp kosher salt
1/4 cup chicken broth


5 boneless, skinless chicken breast
Tortillas
Cheese
Topping of your liking



Grill your chicken. Coat in pesto sauce and serve wam or cold.

Delicious!!


Last time I made we had leftovers and made as nachos..  soo good!  Pete said that’s the way to go

Easy Doughnuts

Soo Easy!


Ingredients:
1 package Pilsbury Large Homestlye Biscuits
oil to fry
Powder sugar
frosting



Directions:

Preheat Oil over medium heat for about 5 min to make sure warm enough. Poke a hole through center of biscuit. Round out nicely. Drop doughnut in oil (my oil cover half of doughnut). Flip once one side is light brown. Cook other side. Place on papertowel to obsorb some oil. Let cool completely. Top with powdered sugar or frost as desired.


Frosting :
Powdered sugar.
1 tsp. vanilla
2 tbsp. milk

Pour powder sugar until desired consistensy is reached.

DELICIOUS!! and soo simple!
