Knockoff "BOBBIES"

Ingredients:

Sub Sandwich Rolls
Turkey or Chicken
Turkey Stuffing
Mayo
Cranberry Sauce


Soo Delicious!!

Oreo Truffles


These are my families FAVORITE. There a HIT to anyone who has ever eaten them. Must try if you havent. They are easy too.

Ingredients:
1 case of Oreos
1 pkg cream cheese
1 bag semi sweet milk chocolate
1/2 bag white chocolate
Vegetable Oil


1.First crush all oreos in food processor (Or, if you dont have one you can place in large ziploc bag and roll with a rolling pin (it wont work as well but will get the job done).



Then mix in the cream cheese ( You'll need to squeeze it all together with your hands).
Then roll into equal size balls, depending if you wants lots of small or less big. I like them about a teaspoon size. Place on pan and chill for about 15 min.


Melt in sauce pan the whole bag of SEMI sweet chocolate. First pour in about 1.5 Tablespoons of Oil and then pour in the chocolate.  Do this on LOW heat (or it will cook and thicken and wont work.) The oil will help thin the chocolate so it rolls on smoothly.


Roll balls into pan while still on lowest heat. Place on pan. Once all covered. Repeat melting of white chocolate in the same process. Then dip fork into white chocolate and drizzle over the tops. (Your could dye chocolate fun colors for holidays). Chills completely before serving.



SOO YUMMY!! Just one wont be enough!!

Cafe Rio Pork Nachos

Layer chips, meat, and cheese. Bake 15-20 min. Serve with pico de gayo and sour cream. Soo yummy!

Cafe Rio Pork Copycat

Taste just like it!!!
2 pounds pork (we use boneless pork rib meat)

3 cans Coke (NOT diet)
1/4 c. brown sugar
dash garlic salt
1/4 c. water
1 can diced green chilies
3/4 (10oz) can red enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)
1 c. brown sugar


Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry) or on low for 8 hours. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.

In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.

Put shredded pork and sauce in crockpot and cook on low for 2 hours. That's it!

Sopapilla Cheesecake

3 (8 oz) Packages of Cream Cheese, softened
1 1/2 cup white sugar
1 1/2 tsp. vanilla extract
2 (8 oz.) cans cresent roll dough
1/2 cup melted butter
1/2 cup white sugar
1 tsp. ground cinnamon
1/4 cup sliced almonds (optional)

Directions:
1. Preheat oven to 350*
2. Beat cream cheese with 1 1/2 cup sugar, vanilla, until smooth.
3.Grease cheescake pan, press on roll of dough in pan until covered.
4. Spread cream cheese mixture evenly over layer of dough.
5. Repeat layer of dough on top with remaining can.
6. Pour melted buter of top
7. Sprinkle top with 1/2 cup sugar and cinnamon (almonds if wanted).
8. Bake for roughly 45 min, or until dough is golden brown. Cool completely before serving.

Sweet Restaurant Slaw

Servings: 8

Ingredients:
 1 (16 oz.) bag of coleslaw mix
2 Tablespoon Diced Onion
2/3 Cup Miracle Whip
3 Tablespoon Vegetable Oil
1/2 Cup White Sugar
1 Tablespoon White Vinegar
1/4 tsp. Salt



Combine all ingredients and chill for at least 2 hours before serving.

Game Day Buffalo Chicken Dip


This is a good amount for your own family. Double this for a small party and more for large party.. but its delicious.. might go fast.

Ingredients:
1/2 Lb Chicken, boiled and shredded
3 oz. Franks Hot Sauce
4 oz. cream cheese, softened
4 oz. ranch
1/4 cup shredded sharp cheddar cheese


Directions:
Preheat oven to 375*. Place shredded chicken in pan and top with hot sauce. In medium saucepan mix over medium heat cream cheese and ranch until smooth. Pour over chicken mixture. Bake for 20 min. Top with shredded cheese nad bake additional 5-10 min. Serve warm with chips of celery.



Seriously GOOD!!

Brazilian Lemonade

I LOVE LOVE this. But no one else in my family does.. What gives. :) Try it!!


Ingredients:
4 Limes
1 cup sugar
6 cups cold water
6 Tablespoons sweented condensed milk


Cut limes in 4ths. Place half the limes and half the water into blender. Pulsate 5 times. Strain ... OVER the top of pitcher. Dump lime rinds. Repeat with remaining limes and water. Add sugar and sweetened condensed milk. Chill and Serve Cold. YUMMY!!

Chip Chicken Lollipops

 4 Chicken Breast, Boneless, Skinlees, Cubed
1 egg
2 Tablespoon Milk
2 Cups Crushed Chips
Sticks


Mix Milk and Egg in on small dish. In another place crushed potato chips (use bbq, sour cream and onion or cheddar and sour cream... your favorite. I used BBQ).  Dip chicken into wet mixture and then roll into chips until covered. Place 3 to 4 on each stick. Bake at 350* for 10 min. then flip sticks. Bake for additional 10 min. Serve  


My family really liked these and you can very with different chips.

Oven Roasted Asparagus

Ingerdients:
1 bunch Asparagus, trimmed
3 Tblsp. Olive Oil (I used vegetable)
1 1/2 Tblsp. Parmesan Cheese
1 garlic clove, minced
1 tsp. salt
1/2 tsp. pepper
1 Tbslp. lemon juice


Toss all ingredients together, except cheese. Then sprinkle cheese over top. Bake at 425* for 12-15 min, or until asparagus is tender. Enjoy!   Kids ate this all up.
