Cheese Balls in Tomato Basil Soup




I used canned tomato basil soup but spiced it up with the fun mozzarella balls.


Mozzarella Balls:

Cubed Cheese
Eggs
Italian Bread Crumbs
Oregano
Basil
Oil to fry

1.In small bowl wisk eggs
2. In another bowl mix together bread crumbs and extra seasoning
3. Heat oil in frying pan
4. Coat cheese with egg, and then bread crumb mix. 
5. Fry for about 30 seconds.




Eat plain or drop in soup! 
Yumm!

Pull Apart Pizza



Same concept as monkey bread.


Ingredients:
 Biscuit dough
Pepperoni
Cubed Cheese

Olive Oil
Parmesan Cheese
Oregano & Parsley


Wrap a piece of biscuit around 2 slices of pepperoni and a cube of cheese. Seal and drop in greased Pan. After you've filled the pan bake according to biscuit package or until golden brown. Let cool and dip in Marina sauce.

Soo fun for the kids!!

Garlic Parmesan Knots

This recipe called for canned biscuits but I happened to have leftover bread dough. You could use whatever you preffer, and depending on the time you have to prepare.


Bread/Bicuits
Olive Oil
Parmesan Cheese (I used powdered from my shelf .. shredded is so expensive)
Garlic
Oregano


Roll bread out to look like a snake. Tie in a knot. Mix in a small bowl the olive oil, parmesan cheese, garlic, oregano. Spread with a baster over the rolls. Bake at 350* for roughly 8-10 min. or until golden brown. Eat warm.

Mini Taco Cups

I LOVE this concept. I stole this from Whipperberry.com    I made them for my sisters baby shower but they would be perfect for any get together. Or just a family dinner... my hubby snatched 7 before I was even finished. 




Ingredients:
Wonton Wrappers
Taco Meat (Ground turkey, ground beef, chicken, pulled pork... you choice your fav)
Taco Seasoning
Your beans (I preffer Black)
Shredded Cheese
Favorite toppings : I used tomatoes, green onions, olives, sour cream)

Directions:
1. Fully Cook meat, adding seasoning and beans.
2. Spray muffin tins with cooking spray
3. Lay in wonton wrappers (note: they wont crinkle on their own.. ruffle them up to your liking, they will harden the same as you place then in the pan)
4. Fill with taco filling. Top with cheese
5. Let cool sligtly and add toppings.
6. Drizzle with sour cream if your like (I did so by placing sour cream in sandwich sized ziploc and clipping the corner off (keep it small). Then drizzle away.

ENJOY!! Ill definately be making these cuties again.

Chocolate Zuchini Muffins




Made 24 muffins :

Ingredients:

3 eggs

1 cup vegetable oil

Directions:

  1. In a mixing bowl, beat eggs, oil, sugar and vanilla.
  2. Stir in zucchini.
  3. Combine dry ingredients; add to zucchini mixture and mix well.
  4. Pour into two greased 8x4x3-inch loaf pans.
  5. Bake at 350°F for 1 hour or until bread tests done. Makes 2 loaves.





    Muffins are the perfect freezer breakfast. With this making 24 muffins. I froze a bunch and just pulled out like 5 the night before for a super fast, yummy breakfast.

Bacon Ranch Flatbreads



Ingredients:
Chicken Breast
Bacon
Ranch
Shredded Cheese
Flatbread




Grill your Chicken (seasoned to your prefrence)
Cook Bacon


Cut cooked chicken and bacon into bite sized peices. Place chicken, bacon and cheese into flat bread. Heat and Grill bread. Open and Drizzle with Ranch.  Yum!

Creamy Chicken Tacos



Ingredients:
3-4 Boneless Skinless Chicken Breast
1 Can Cream of Chicken Soup
1 equal portion of Chunky Salsa

Add all ingredients into crock pot and cook on low for 8 hours or high for 4 hours.


Serve on tortilla with your favorite toppings.

Sloppy Joes



These are my moms sloppy joes that I grew up on. Love them!

Brown 1 lb. Ground Turkey or Beef

1C. Ketchup
2 T. Brown Sugar
1/2 tsp. mustard
2 T. Vinegar
1 tsp. worstershire sauce

Mix sauce into cooked meat. Cover and Simmer 10 min.  

Makes 6 sandwiches

Ingredients:
  • 1-1/4 lbs 99% lean ground turkey
  • 1 jalapeño, seeds removed (leave some in for spicier meatballs)
  • 2 cloves garlic
  • 1/4 cup chopped fresh cilantro
  • 3 scallions
  • 1/4 cup seasoned bread crumbs
  • 1 egg
  • 1 tsp cumin
  • pinch oregano
  • salt and fresh pepper
  • cooking spray

Directions:

Lightly spray
baking pan with oil.
Preheat
oven to 400°.
Place jalapeño, garlic, cilantro, and scallions into a small food processor or chopper and pulse a few times until finely minced.
In a large bowl combine turkey, chopped herbs, bread crumbs, egg, cumin, salt and pepper. Using your hands, mix well and measure 1/4 cup meat, then divide in two so you end up with each meatball 1/8 cup in size. Roll and place on a baking pan.

Buttermilk Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons white sugar
  • 3 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3 cups buttermilk
  • 1/2 cup milk
  • 3 eggs
  • 1/3 cup butter, melted

Directions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Baby Red Potato Salad

Ingredients:

4 cups baby red potatoes, cut in small pieces
1/4 cup red onion, finely diced
3 scallions, diced
1 tsp. mustard
1 Tbsp. extra virgin olive oil
1 Tbsp. red wine vinegar
1 Tvsp reduced fat mayonnaise
salt & pepper


Boil potatotes in salted water until soft, approx 10 minutes. Drain and let cool


While the potatoes are boiling, combine all other ingredients. Coat onto potaoes. Serve room temperature or cool till ready to serve.

Monkey Bread



Ingredients:

Bread or Boll Dough (either homemade or pre-package store bought)
Egg
Sugar
Cinnamon


Directions:
Cut Dough into 1.5  inch sections. Beat egg into one bowl and cinnaon and sugar into a seperate bowl. Dip dough into egg and then drop in and coat into cinnamon and sugar mixture. Drop into pre-greased pan and bake at 350* roughly 15-20 min (or amount as stated on dough package).

Cilantro Lime Chicken Tacos

DELICIOUS!! This is a horrible picture but yummy. Very summer tasting. Light and Refreshing! Rylan asked for me to pack in his lunch the next day he liked it so much.

Pesto Ingredients:

1 cup fresh cilantro (do not include stems)
2.5 TBLSP. Extra virgin olive oil
2 Tbslp sliced almonds
3 Tbslp garlic
1.5 tsp lime juice
1/2 cup shredded paremsan (could swap for romano or asiago too)
1.5 tsp kosher salt
1/4 cup chicken broth


5 boneless, skinless chicken breast
Tortillas
Cheese
Topping of your liking



Grill your chicken. Coat in pesto sauce and serve wam or cold.

Delicious!!


Last time I made we had leftovers and made as nachos..  soo good!  Pete said that’s the way to go

Easy Doughnuts

Soo Easy!


Ingredients:
1 package Pilsbury Large Homestlye Biscuits
oil to fry
Powder sugar
frosting



Directions:

Preheat Oil over medium heat for about 5 min to make sure warm enough. Poke a hole through center of biscuit. Round out nicely. Drop doughnut in oil (my oil cover half of doughnut). Flip once one side is light brown. Cook other side. Place on papertowel to obsorb some oil. Let cool completely. Top with powdered sugar or frost as desired.


Frosting :
Powdered sugar.
1 tsp. vanilla
2 tbsp. milk

Pour powder sugar until desired consistensy is reached.

DELICIOUS!! and soo simple!

Chilis Chicken Enchilada Soup



Ingredients:
1 Tbslp. vegetable oil
1 lb. chicken breast (approx. 3 fillets)
1/2 cup diced onions
1 garlic clove, pressed
4 cups chicken broth
1 cup masa harina (Mexican flour.. can be subsituted with normal flour but has slightly different taste)
16 oz. velveeta cheese
1 tsp. salt
1 tsp. chili powder
1/2 tsp. cumin


Directions:
1. Add 1 Tblsp. oil to a large pot over medium heat.
2. Add chicken breat to pot and brown for 4-5 min
per side
3. Set chicken aside
4. Add onions and garlic to pot and saute over medium heat for about 2 minutes, or until onions begin to become translucent.
5. Add chicken broth.
6. Combine masa harina with 2 cups of water in a medium bowl and whisk until blended.
7.Add masa mixture to pot with onions, garlic and broth.
8. Add remaining water, enchiladas sauce, cheese and spices to pot and bring mixture to a boil.
9. Shred the chicken into small, bite sized pieces and add it to the pot.
10. Reduce hea and simmer soup for 30-40 minutes or until thickens.
** We thought this was a tad to thick compared to chilis, if you agree add a little more chicekn broth.
11. Serve soup, garnish with pepper jack cheese, tortilla chips amd pico de gallo.

Pasta E Olio

Ingredients:
1 lb. spaghetti
2 tsp. chopped garlic
1/4 cup chopped parsley
1/4 tsp. crushed red pepper flakes
1/4 cup olive oil
1/4 cup melted butter

Directions:
1. In a large pot with boiled salted water, cook spaghetti pasta until done. Drain
2. Meanwhile, in a large skillet over a low heat saute garlic, parsley, and red pepper flakes with olive oil. Cook until garlic turns golden in color, about 10 to 15 min.
3. Toss pasta with garlic mixture and butter. Serve Warm

Perry Salsa





Ingredients:
Hunts Canned whole peeled tomatoes, drained
1 jalepeno...add as , much or as little as you like, thats were the heat is.1/2 bunch of cilantro
1/2 - 1 tsp garlic (to taste)
1 freshly squeezed lemon.

Place all ingredients in a blender and mix until smooth.

Creamy Black Bean Burritos



Prep Time: 10 min
Cook Time : 15 min.
Servings: 6


6 flour tortilla
6 Tbslp. vegetable oil
1 meduim onion
3/4 red bell pepper
2 Tbslp. minced Garlic
2 (15 oz) cans of black beans, rinsed and drained
1 Tbslp. minced Jalepeno Pepper (less for less heat)
6 oz. cream cheese
1 1/2 tsp. salt
6 Tblsp. fresh cilantro


Directions:
1.Wrap tortillas in foil and place in oven heated to 350* Bake for 15 min. or until heated through.
2. Heat oil in a 10 inch skillet over medium heat. Place onion, bell pepper, garlic and jalepeno in skillet, cook for 2 min stirring occasionally. Pour beans into skilltm cook for 3 min.
3. Cut cream cheese into cubes and add to skillt with salt. Cook for 2 min. stirring occasionally. Stir cilantro into mixture.
4. Spoon mixture evenly down center of warm tortilla and roll tortillas up. Serve immediately.

Sour Cream Scalloped Potatoes



Prep Time: 10 min
Cook Time 1 hr. 10 min

1 (32 oz) package frozen cubed hash brown potatoes, thawed
2 cups cour cream
1 (10.75 oz) can cream of chicken soup
1 cup shredded cheddar cheese
1/2 cup butter, melted
1/2 cup finely chopped onion (or about 1/2 Tbslp. onion powder)
1 tsp. salt
1/2 tsp. pepper
1 cup crushed corn flakes
Directions:
In a bowl, combine the first eight ingredients. Pour into a greased baking dish. Bake, uncovered @ 350* for 1 hour. Sprinkle with corn flakes and return to oven for 10 min.

Saucy Chorizo Meatballs

So moist and absolutley delicious!!


Ingredients:
1 tube ground beef
3/4 Tube Pork Chorizo
4 peices of bread.. toast and crumbled in food processor ...into bread crumbs
2 eggs
2 jars favorite spaghetti sauce


1.Mix all ingredients together in bowl.
2. Roll into 1 -1.5 inch balls.
3. Place on well greased pan
4. Bake for about 30 minutes rolling about every 10 min.. or until cooked through
5. Place cooked meatballs in crockpot, covering with sauce.... simmer for about 2 to 3 hours.


You can eat these plain, topped with shredded mozzarella cheese.

We ate them on sub rolls topped with cheese and toasted in the oven... Liek normal meatballs subs.

Cookie Brownies



Very Delicious


Use your favorite choc. chip cookie recipe and your favorite brownie recipe.

Spread brownie mix in pan and drop spon fulls of cookie dough on top of brownies. Bake

Beef Chimichangas




These are a Sanders Favorite. Soo Yummy!!

I never measure but heres how my bowl looks before stirring.


Cook roast in crock pot, then shred.
Add about 2 cans cream of mushroom.
Add spoonful of garlic
Add shredded cheese



Mix and spread into tortilla, about this much :


 Fold and hold together with a toothpick



Fry in oil (make sure oil is hot enough before placing in chimichangas.. otherwise it will soak up extra oil instead of cooking it. :(   )      You could bake these instead to be be more health concious.
 Serve with guacomole, sour cream, salsa, lettuce, cheese, ect ...I only had salsa and sour cream.

Dinner Rolls

1 Cup warm milk


2 eggs, room temperature

1/3 cup margarine, melted

4 1/2 cups bread flour

1 tsp. salt

1/2 cup white sugar

2 1/2 tsp. bread machine yeast
 
 
Warm milk and eggs in microwave to be room temperature. Add to bread machine. Add 1 Tbsp. *warm, (baby bath) with 1 tsp. sugar and yeast in small dish. Let yeast rise a little. Dump all wet ingredients into bottom of bread machine and then add all dry ingredients. let dough rise and then roll into balls or pretty rolls and bake at 350* for about 15-20 min or until golden brown (depending on size of rolls).

Potato Corn Chowder



Six Potatos cubed in 1/2-3/4 inches
1 onion, cubed
1 can creamed style corn
1/2 pkg. cooked bacon , cut into chunks
6 cups chicken broth
pepper and grilled seasoning to taste


Cook bacon. Take out of pan.. cook onion and potato cubes in bacon dripping until browned a little. Put all ingredients in crock pot nad cook for 4-6 hours. Enjoy

Grilled BLT Wraps

I made myself a wheat one but the kids ate white.

Spread your tortilla with a little mayo. Top with Bacon, Lettuce, Tomato. Palce on greased grill..I used my George Foreman


Pete and the kids dont like tomato so I put a slice of Turkey and a little cheese to jaxx it up a little. The boys both are 2. Soo Simple and yummy
